At the conclusion of the construction, the builder, Dave Eberhardt, threw a party for us, teaching us and guests how to cook using our new oven and smoker. We are extremely happy with the outcome. We really like the whole concept of cooking this way, including the vast variety of foods. Preparing food in a wood fired oven is very unique concept and works well with our fondness of grilling and cooking outdoors. Plus they look great! The heat up (curing) period was a lot of fun as we counted down the days to when we could actually cook. But the best experience by far was when we slid our first pizza into the oven and watched it cook to perfection in 90 seconds.

My wife and I looked at each other and agreed that this was a very good investment! And the pizza was easily the best we’ve ever had! I am definitely an amateur cook, but I have always enjoyed spending quality time on the weekends outdoors with my wife and kids grilling hamburgers on the gas grill, frying some fish, or smoking a brisket or pork shoulder late until the early morning on the Big Green Egg. But I wanted to venture out, so I started researching wood fired outdoor ovens that can cook a variety of foods.

Definitely pizza, but also vegetables, turkeys, chicken wings, appetizers, etc. Pretty much anything you would throw in an indoor oven.I am a ‘do-it-yourself’ kind of guy so I first looked into building my very own from scratch using bricks and mortar. I ruled this out fairly quickly as we wanted this to be the focal point of the backyard and I didn’t want it obvious that I hacked this oven together by myself. I also looked at oven kits, but personally didn’t find huge a difference in price once I added up the requirements of the base that we wanted.

I decided if I was going to make the investment, and an investment for me was certainly what it was, I wanted to do it right and with the right company. What I absolutely didn’t understand is the art that goes into the implementation. It is great experience. Not just watching Dave at TOC treat the trowel like a paintbrush creating a piece of art, but hearing his stories and even sharing a beer or two at the end of the day.The second misunderstanding during the research phase was I focused on how really good was the food going to be out of one of these things.

Is that cost really worth it? I knew, but definitely underestimated the experience part. Absolutely the food is great, but the lighting of the fire, waiting and watching the flames during heating and most of all the experience during the preparing and cooking. What other meal or event can you have with neighbors, family and friends where everyone can participate, challenge who’s pizza is the best or cooking something in the oven for the first time.Yes, it is an investment. Absolutely, the food is really fantastic. But the experience is worth the investment. We don’t just use it every once in a blue moon.

We often plan during the week on what we can make and who we will invite over the weekend. I’ll do it again at our next house and can’t imagine partnering with someone other than the good people at Texas Oven Company. Immediately upon our initial visit, seeing the wonderful piece being created, we “signed up”! Dave and his crew assisted us in placing our oven appropriately on our property, as well as reviewing style, design, colors, rock choice, etc. From the start to the finish, these folks were professional, timely, friendly, and flexible as our oven was created right before our very eyes! Upon completion, there is even a “woodburning oven 101″ to enable you, the new owner, a successful launch of your new “toy”!

The classic method of starting a fire – build an inverted pyramid starting with very small pieces of kindling wood and creating layers of increasing size – is all fine and dandy, assuming you have a whopping great heap of kindling at your disposal. On the exceedingly rare occasions when this has been the case for me, it’s worked like a charm. But the operative phrase here is “exceedingly rare”.Much more frequently I find myself with a garage full of big old logs that would burn like an SOB if I could just get them started, but nothing that would even remotely qualify as kindling-sized. Since I live in the northeast (the land that Spring forgot) and I depend on a fireplace insert for most of my heating, this can become a major hooha. My one and only attempt to actually split logs into kindling with an axe was an utter failure, and fairly terrifying as well; within minutes it became clear that I stood a much greater chance of lopping off a toe than getting that damn log to split. So over the years I’ve come up with a serviceable repertoire of kindling replacements.Commercial fire starters – the lazy (and rich) person’s kindling substitute.

Most large retailers (i.e., Wal-Mart, K-Mart, Lowe’s, etc.) carry these, which are essentially small slabs of treated compressed sawdust. They’re pretty effective, but expensive and (around here, at least) are only available during the peak of the fireplace season. So in late March you’re outta luck.

Newspaper knots – my personal favorite; free, easy, and pretty darn reliable. You simply lay about four or five sheets of newspaper (NOTE: regular pages, not the shiny stuff from ads or magazine sections) together in a pile and roll them lengthwise into a fairly tight tube, then tie the tube into a knot.

If you tuck the “tails” of the knot back in, you wind up with a pretty dense wad of paper about the size of a softball. In my experience it takes between four and six knots to get a fire going (depending on how big/dry your logs are). Crumple up three or four sheets of newspaper and put your knots on it, then lay a couple of your smallest logs over the knots. Most of the time the knots will burn long enough to get at least a good smolder going, and hey.

You can always throw in a couple more. The price is certainly right.Bark – You know when you get a really crappy load of wet wood, so wet that the bark just drops off in big sheets? Well start looking for a new wood delivery guy, but in the meantime don’t throw that bark away – pile it up somewhere and let it dry, because dry bark is just a dynamite fire starter. It usually catches like crazy and it burns hot, but it tends to burn up fairly fast. It’s good on its own, but superb combined with a few newspaper knots.Pinecones – They start super-easy and burn like gangbusters but they don’t last long, so you either need to have a million of them on hand or else just use them to enhance newspaper knots or bark. They smell nice, too.Twigs, sticks, and other assorted yard debris – It’s the low-rent option, but hey – you do what you gotta do.

The leftovers from tree and shrub pruning can be piled up to dry and then broken into serviceable kindling. I do a lot of this (cause I do a lot of tree and shrub pruning) and I won’t kid ya – it’s kind of a pain, but it works.
